So, I’m trying to be a good mom. I really am — but when it comes to dinner time, I draw a giant blank. We give Sheffield his fair amount of mac’n’cheese, grilled cheese and chicken nuggets, but I really don’t want him to grow into being a picky eater, so I’ve tried to start finding quick and easy (and healthy!!) recipes that we can give to baby, but also you could eat if you really wanted.
The first one I came across that sounded awesome were these cheese, broccoli and quinoa bites. Our baby isn’t so big on meat right now — even when we do give him chicken nuggets, he eats maybe one and a half. We’re still getting used to this him eating normal people food with us – sort of crazy, yeah?
While trying to find something that he may eat, I came across this really simple to make recipe for Cheddar Cheese, Broccoli and Quinoa Bites! It calls for onion and red pepper flakes, but we omitted those and just added some salt, but just a pinch to give it some flavor.

What you need:
3/4 cup uncooked quinoa, rinsed
1 1/2 cup water or vegetable broth to cook the quinoa.
2 cups broccoli florets, finely diced.
1 garlic clove, minced
1 1/2 cups shredded cheddar cheese (or more if you’re meeeee!)
pinch of salt
What to do:
Preheat oven to 350F – and spray mini muffin pan with cooking spray.
Cook quinoa according to package directions – let cool.
In a large bowl, combine quinoa, eggs, broccoli, garlic cheese and salt.
Put a heaping tablespoon of the mixture into the muffin cups. Bake for 15-20 minutes or until edges are golden brown. Let cool five minutes before removing from tin.
Easy, right? And they are so good! I wish I would have added a little more garlic ( I LOVE GARLIC!), and maybe added the pepper flakes and onion -but hey, one step at a time.
