I’ve been wanting to try out making this pasta for forever. For two reasons: It really is so so simple, and becuase it’s one of Anthony Bourdain’s favorite dishes. Plus it gave B an excuse to get out our pasta maker attachment for our KitchenAid mixer. (and y’all – homemade pasta! Heart-eye emojis for days – I don’t ever want to go back to box!)
WHAT YOU NEED
1/2 cup spaghetti noodles (or really whatever pasta you want)
1 cup finely grated Pecorino Romano (plus more to top off!)
1 Tbsp pepper, plus more to taste
WHAT YOU DO
Bring a large pot of water to a boil over high heat – salt the water. When the salt has dissolved, add pasta and cook until al dente.
While pasta is cooking, in a large bowl, combine the Pecorino and papper, and a small ladle of the cooking water from the pasta. Mix vigrously and quickly to form a sauce.
When the pasta is cooked, strain it and quickly add it to the sauce. Toss vigrously, adding water as needed to make sure all of the cheese is melted. Make sure to completely coat the pasta.
Plate the pasta and be sure to add some more cheese and pepper on top. Serve immediately.
