WHAT YOU NEED
2 1/4 stick unsalted butter, room temp
1 cup sugar
1 cup light brown sugar
2 eggs, room temp
2 1/2 cup flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
2 tbsp. instant espresso powder (found this in the coffee aisle)
12 oz chocolate chips
WHAT YOU DO
Preheat oven to 350.
Beat butter and sugars until light and fluffy. Then add eggs one at a time, mixing well after each.
In a separate bowl, mix together flour, cocoa powder, baking soda, salt and espresso powder.
With the mixer on low, slowly add the dry ingredients to the wet. Mix until fully combine.
Stir in the chocolate chips.
Drop dough onto parchment paper lined cookie sheet. Bake 10-12 minutes.
These cookies felt like more “adult” cookies – less sweet, but still just as delicious. Enjoy!!
