This is one of my most favorite dinners that we have during the week and it is so so easy.
// 1 pound raw shrimp
// 1 cup uncooked rice
// cilantro (optional)
// 1 tsp hotsauce
// 1/4 cup honey
// 1/4 cup soy
// 1 Tbsp Cajun seasoning
// 2 cloves garlic, minced
// 1 Tbsp lemon juice
// For the shrimp marinade: Mix honey, soy, Cajun seasoning, lemon juice, hot sauce, and garlic into a small bowl. Throw shrimp into the bowl and let marinade for half an hour.
// Follow instructions on package to cook the rice (we’ve always gotten our best results with a rice cooker — seriously, may be the best kitchen appliance we own next to the stick blender). Mix in cilantro if you so desire.
// Saute shrimp on hot stove until cooked (just pink all around).
// Cut avocado into slices
// Toss rice into serving bowl and top with half the shrimp and avocado. Repeat into another bowl. You can put some of the Cajun seasoning on top of the avocado if you want, too. Serves 2.
So there you have it! A super easy weekday dinner — and if you’re lucky enough to have a kid that will eat shrimp, then the kiddos will definitely love this too!
