I love a good bright orange made from the box macaroni and cheese. Sometimes, though, it’s hard to convince my husband to eat like a toddler. Don’t get me wrong – sometimes we will just eat bread and butter or chips and guac for dinner – but some times I like to jazz up a nice comfort dish. Enter grown-up mac n cheese!
what you need
// 1 lb spicy Italian sausage
// 1 green and 1 red bell pepper diced
// 2 cups elbow macaroni
// 18 oz marinara (I used a garlic and pepper one)
// 18 oz water
// 1 cup mozzarella cheese
what you do
// Cook sausage in a large skillet.
// Add diced peppers, macaroni, marinara and water. Bring to a boil.
// Reduce heat to simmer. Simmer, uncovered, for about 20 minutes until macaroni is cooked. Make sure to occasionally stir.
// Sprinkle with cheese, and mix everything. Remove from heat and let it sit for about 2 minutes or until cheese is completely melted.
This did take a little bit longer than I would normally like on a week night, so when I make it again, I would definitely use this as a weekend meal. The original recipe called for half and half as well, but I knocked that out to reduce the amount of calories in the dish – I mean, it’s already pasta, yeah? Enjoy!
