These cookies are absolutely amazing – I got an immediate request to make them again once they were again. I don’t know – there is just something about a delicious peanut butter cookie, and then add in white chocolate chips? Yes and please.
WHAT YOU NEED
1/2 cup unsalted butter at room temp
1/3 cup creamy peanut butter
3/4 cup sugar
1 tsp vanilla
1 1/4 cup all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 cup white chocolate chips
WHAT YOU DO
Preheat oven to 350.
With an electric mixer, beat butter, sugar and peanut butter until creamy. Add egg and vanilla and beat well.
Stir the flour, salt and the baking soda in a small bowl. Add in small increments to the wet mixture and beat well.
Stir in white chocolate chips, and drop cookies onto cookie sheets, about 2″ apart.
Bake 9-11 minutes. Allow to rest on baking sheet for 2-3 minute before removing to cooling rack.
