I love shrimp so much – and they are so easy and so quick to make. Plus they go with a ton of other things (rice, zoodles, vegetables), so you can always mix it up.
WHAT YOU NEED
// 1 lb of shrimp – peeled
// 1 yellow, 1 red, 1 orange bell pepper, sliced
// 1 small white onion
// 1 1/2 TBSP of extra virgin olive oil
// 1 tsp salt
// 2 tsp chili powder
// 1/2 tsp garlic powder
// 1/2 tsp cumin
// 1/2 tsp smoked paprika
WHAT YOU DO
// Preheat over to 450 degrees.
// In a large bowl, mix onion, bell peppers, shrimp, olive oil, salt and other spices. Toss to combine.
// Spray baking sheet with cooking spray.
// Spread shrimp mixture evenly over the baking sheet.
// Cook at 450 degrees for about 8 minutes. Then turn the oven to broil and broil for about 2 extra minutes. We also threw the tortillas in during the broil, and they came out perfect.
I made these while I was doing low-carb one week, so I just ate it with the shrimp and peppers, and it was still amazing!
