I’ve mentioned on this here blog how picky my child is. We are still maneuvering meats (most of the time unsuccessfully), and trying to figure out when mac n cheese became gross. So I tried to get creative, and scoured Pinterest for ideas, and came up with these two that have been giant hits with my picky as all get out kid.
First up is the Mini Chicken & Waffle:
All you need is store bought chicken nuggets and mini waffles you can buy in your grocery’s freezer section. I used Publix brand chicken nuggets and Eggo mini waffles. Cook up the nuggets in the oven, throw the mini waffles in the toaster – put the nugget in between two mini waffles (or just one —whatever you want), and make sure to have some syrup on hand. My kid will eat anything as long as syrup is involved.
Next up is the Corn Dog Mini-Muffins:
what you need:
1/2 cup melted butter *1/2 cup sugar*2 eggs*1 cup buttermilk* 1/2 tsp baking soda* 1 cup cornmeal* 1 cup all-purpose flour* 1/2 tsp salt* 8-10 hot dogs (whichever brand/meat you love. I have a love affair with Nathan’s hot dogs, so that’s what I used)
what you do:
preheat oven to 375 degrees
whisk together butter and sugar*add eggs and stir well*add buttermilk and continue to whisk together
in a separate bowl, combine baking soda, cornmeal, flour and salt, and stir to combine*whisk into wet ingredients in two batches
spray a mini-muffin tin with non-stick spray ( I did this incredibly generously)*spoon 1 tbsp. of batter into each muffin cup*cut up your hotdogs and place one hot dog bite into the middle of each muffin cup
bake for 8-12 minutes or until cornbread is golden brown*cool in tins for about 5 mins*makes around 36 muffins (and refrigerate well, so store away!)
So there you have it! Two really simple snacks to make for a really picky toddler. I’m not even ashamed to admit that I have used both of these for dinners as well. Sheffield loved the muffins, and requested them whenever he saw the muffin tin.
