I love avocados, and I really love chicken salad, so while perusing Pinterest, I came across a healthier version of chicken salad using avocados instead of mayonnaise. I whipped it up, and it came out so delicious! It was so easy, and I bet I could even get my kid to eat it.
what you need:
// 1 cup finely chopped cooked chicken
// 1 avocado, seeded and peeled.
// 1/4 cup white onion
// 2 tsp lime juice
// 1/2 tsp salt
// pinch of garlic powder
what you do:
// Put the chicken, avocado and onion in a medium bowl. Stir everything around until well mixed.
// Add lime juice, salt and garlic powder. Add more lime juice or salt to taste.
See? That easy. We served it on delicious Vietnamese rolls from a bakery in New Orleans, but if you wanted to keep it healthy, you could serve it on lettuce. You could also add some cilantro or parsley if you’d like!
